 This week's Recipe of the Week features sugar free, non-fat muffins.
We received this yummy recipe from a
member of our healthy cooking's online group from down under in Australia. These
muffins would be best served for breakfast and snack time.What you need:
- 4 sugar bananas or 2 large bananas
- 1 tspn cinnamon
- 1 tspn baking powder
- 2 cups wholemeal flour
- 1/2 cup of nonfat blueberry yogurt (or similar)
- 1/3 - 1/2 cup of skim milk
- 2 eggs (or 3 - 4 egg whites)
What you do:
- Mash bananas. Whisk eggs and add to yogurt - mix.
- Place flour, cinnamon, baking powder and together in a large
bowl and mix well. Add milk and yogurt/egg mix and combine well.
- Add milk until you can mix all the ingredients together. Add
enough just to coat the dry ingredients. Spoon into non stick muffin pan and sprinkle with
a tiny amount of coconut.
- Bake at 350 degrees Fahrenheit for 20 minutes or until
golden brown and tests done with toothpick.
Grated apple, diced dried apricots or sultanas can be used instead of bananas for some
variety. The muffins are a little tougher than regular muffins as there is no sugar in
them. Wrap up each muffin in plastic and freeze as soon as cool. I find these muffins a
life saver for afternoon tea when everyone else is munching on their fat filled biscuits.
Sugar-Free Applie Pie
It is apple season in many
parts of the U.S. and what better way to celebrate the harvest with a beautiful apple pie!
The pie crust can be made from your favorite recipe or purchased from your grocery store.
It is good to select apples that are firm and without brown spots. Granny Smith apples are
wonderful in pie because of their tart and tangy taste.

 This week's Recipe of
the Week features a delightful Lemon Bread recipe from cookbook author and chef Gregg
Gillespie. Gregg has written a number of terrific recipe books - like his 2001
Chicken Recipes and 1001 Muffin,
Quick Bread Recipes. Gregg's collections of recipes are not only
delicious but very simple to prepare. Lemon Bread can be served as an afternoon snack, as
a part of a Sunday brunch or pot luck supper.
