 This is a super recipe when you crave fried chicken,
but don't want the calories. Just as tasty, but with half the fat. Delicious!What you need:
- 1/2 cup dried bread crumbs
- 1/2 cup all-purpose flour
- 1 tablespoon chopped fresh parsley*
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- Juice of 1 lemon
- 2 tablespoons margarine or butter, melted
- 2 tablespoons vegetable oil**
- 1 chicken
(3-4 pounds) into 8 serving pieces
What you do:

Heat oven to 350 degrees.
- Combine bread crumbs, flour, parsley, basil, salt paprika,
and pepper in small brown paper bag; seal and shake to mix.
- Combine lemon juice, butter, and oil in large bowl. Add the
chicken, turning the pieces to coat. Working with a few pieces at a time, shake the
chicken in crumb mixture in the bag to coat evenly; place the pieces on a large baking
pan.
- Bake in 350 degrees for 45 minutes or until the chicken meat
is no longer pink near the bone.
- Increase the heat to broil. Adjust the oven rack 4-6 inches
from the heat source. Broil chicken until golden, 5-8 minutes.
* you can substitute with 2 teaspoons of dried parsley
** you can substitute with olive oil
Chicken Cacciatore
This recipe is a super quick and delicious
dish called chicken cacciatore. It's Italian and has a little bit of everything in it-
pasta, veggies and chicken. This should serve 6 or 4 really hungry people. I hope you love
