She has a fabulous idea for leftovers- this recipe takes boring roast beef leftovers and turns them into delicious burritos!

about how she created this recipe:

When my children were little they hated leftovers. My father-in-law gave this recipe to me, when my son was three. Both my children are grown now. It has been there favorite leftover recipe throughout the years. It is truly an 'Americanized Burrito'.

What you need:

  • 1 medium onion, chopped
  • 2-3 tablespoons of butter or margarine
  • 2 cans whole potatoes, grated
  • 3 cups of cooked roast beef, cut into bite-sized pieces
  • 1- 2 cans Beef Gravy
  • 1- 2 tablespoons of packaged. Burrito seasonings
  • 1 package Mexican shredded cheese
  • Flour tortillas
  • Taco Sauce

What you do:

  1. Sauté onion in butter or margarine until transparent.
  2. Add potatoes, beef, gravy and seasonings.
  3. Cook until hot.
  4. Now, take one tortilla add 3 or 4 tablespoons meat mixture on burrito add cheese, taco sauce, roll up and enjoy.
