Berry Crumble

click here to find out more about SueThis week's Dessert of the Week features Berry Crumble.  This is a quick and fast  fruit  cobbler.

Berry Crumble is made using your microwave so you won't have to heat up the whole house to make this simple and delicious dessert.

What you need:

  • 3 cups of raspberries or blueberries or 1 package ( 12 or 16 ounces) frozen raspberries or blueberries
  • 2 tablespoons of lemon juice
  • 2/3 cup of packed brown sugar
  • 1/2 cup of all-purpose or whole wheat flour
  • 2/3 cup of quick cooking oats
  • 1/3 cup of margarine or butter, softened
  • 3/4 teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • Cream or ice cream

What you do:

  1. Spread berries in a baking dish- 8x8x2 inches in size.   Sprinkle with the lemon juice. Mix brown sugar, flour, oats, margarine, cinnamon, and salt; sprinkle this mixture on top of the berries.
  2. Microwave uncovered on high (100%), until berries are hot and bubbly, 7 to 10 minutes.  Let stand 10 minutes.  Serve warm with cream or your favorite ice cream.
