This week's
Recipe of the Week is brought to us by Beverly Johnson. Her homemade biscuits are a
big hit with her family and easy to make. Here's a
little more about Beverly
and her wonderful cooking:
Hi,
I have been cooking since I was a young child, I remember my grandma putting a milk crate
near the stove so I could reach while she taught me her cooking secrets. I always loved
her and I've always loved cooking. I am 60 years old now and have grandchildren of my own
and I still love to cook and I love to try new recipes. I have made cook-books with my
recipes in them for my children and I hope some day my grandchildren will remember me
fondly for always having a good humor and good food as I do my grandmother.
Thanks Bev!
Beverly's Baking
Powder Biscuits
What you need:
- 2 C Flour
- 1 T Baking powder
- 1/2 t Salt
- 1/3 C Shortening
- 2/3 C Milk
What you do:
Preheat oven to 450°F.
- Sift dry ingredients into a bowl. Cut in the shortening with
a pastry blender, and add the milk, blending quickly, just until dry ingredients are
moistened. A sticky dough will result.
- Turn the dough out on a floured board. Flour your hands and
knead the dough 3 or 4 times. Important: Do not overhandle dough. Roll or pat to a
1/2-inch thickness.
- Cut with a 2-inch biscuit cutter.
- For soft-sided biscuits,
place close together on a lightly greased baking sheet or in a lightly greased
cast iron skillet (vegetable cooking spray works just fine).
- For biscuits that are crusty all around,
place about an inch apart on a lightly greased baking sheet.
Bake at 450°F for 12 to 15 minutes.
Makes a dozen biscuits.
