 This week's Recipe of
the Week features a terrific holiday offering from our friend Kim which will make a great
appetizer!. She says:
The recipe for the Cheese log was given to me by my
husbands Aunt several years ago. I had lost it but then we went to a family reunion a
couple of weeks ago and she brought it. I will be making it sometime soon to take to work
for Christmas. I love to cook but
other than daily meals and occasional get-togethers, I don't do much special cooking. I
have started learning how to cook Greek food.
I try a new recipe about once a month.
My husband, son and I were fortunate enough, to go to a
Greek food festival a few weeks ago. The food was delicious, but, boy that Greek coffee
was strong. It had a very good flavor but I don't drink much coffee other than my morning
cup. I don't know if you have ever had Greek coffee, but you do not stir this and you do
not drink the last of it because of how strong it is and the grounds left in the bottom!

Cheese Log
What you need:

lg. pkg. Velveeta cheese
- 1 pkg. Cream cheese
- chopped jalepeno peppers
(the ones for nachos)
- chopped pimentos
- chopped Pearl onions
What you do:
- Let Velveeta and cream cheese set out till softened.
- Roll out Velveeta between two sheets of wax paper into a
rectangle.
- Spread cream cheese in a thin layer on top of Velveeta.
Sprinkle remainder of the ingredients on top of cream cheese.
(How much of each depends on your taste. I like a lot of jalepenos and just a little of
the pimentos and pearl onions.)
- You can use green olives with the pimentos in them.
(This is what I do, but some people don't like olives.)
- Next, start rolling from the wide side of the rectangle,
jelly roll style. It won't make a tight small roll, it will be about 3 to 4 inches wide
and 1 to 1 1/2 inches thick. wrap in the wax paper and chill.
- Turn out onto a serving platter and serve with Ritz
crackers.

 For the person on the go, this
recipe for broccoli-Cheddar Soup is perfect. You can make this in the morning and serve it
with a salad and bread for a terrific dinner.
Sue's Yeast Rolls
The one thing that is sure to be on our dinner
table is yeast rolls. It is one of my favorite breads.
These rolls are light, fluffy, and easy to make. They are a family tradition in my house !
