It's Italian and has a little bit of everything in it- pasta, veggies and chicken. This should serve 6 or 4 really hungry people. I hope you love it. Bon Appetite!

What You Need:

  • cover4 1/2 cups of water
  • 1 clove garlic, finely chopped
  • 1 medium green pepper cut into 1/2 inch pieces
  • 1 medium onion, chopped
  • 1 cup uncooked orzo (pasta section of grocery store)
  • 1 can (28 ounces) whole tomatoes, in puree
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound boneless, skinned chicken breasts, cut into 1 inch chunks
  • 1/2 cup pitted black olives, chopped
  • 1/2 cup grated Parmesan cheese

What You Do:

  1. click here to buy this bookBring 4 cups water to boiling in large skillet. Add garlic, green pepper, onion, and orzo; cook over medium-high heat, stirring occasionally, for 10 minutes. Drain; return orzo mixture to skillet.
  2. Add tomatoes, oregano, basil, salt, pepper, and remaining 1/2 cup of water to skillet, breaking up tomatoes with wooden spoon. Bring to simmering.
  3. Add chicken, olives, and 1/4 cup of Parmesan cheese to skillet; cover and simmer, stirring occasionally, over medium heat for 10 minutes or until chicken is no longer pink in center. Serve immediately, sprinkling with remaining Parmesan.
