Beth is the mother of three year old Alexandria. Her recipe island-Style Chicken was found by her dad. She has always loved this dish because it has vegetables, meat, and sauce which all together makes a sweet taste combination.

Island-Style Chicken

What you need

  • 1 can (about 8 ounces) pineapple chunks in heavy syrup
  • 2 pounds chicken parts
  • 2 tablespoons shortening
  • 1 can chicken broth
  • 1/4 cup vinegar
  • 2 Tablespoons brown sugar
  • 2 teaspoons soy sauce
  • 1 large clove garlic,minced
  • 1 medium green bell pepper,cut in squares
  • 3 tablespoons cornstarch
  • 1/4 cup water

What you do:

  1. Drain the pineapple chunks, reserving syrup.
  2. In a skillet, brown the chicken in shortening; pour off the fat. Add reserved syrup,broth,vinegar,sugar,soy and garlic. Cover cook over low heat for 40 minutes. Add green pepper and pineapple chunks; cook 5 minutes more or until done.
  3. Stir occasionally. Combine the cornstarch and water;gradually stir into the sauce. Cook, stirring until thickened. Serve with cooked parsleyed rice.

    Make 4 servings.
