This week's Recipe of the Week is brought to us
by Sandra David of Spanaway, WA., a busy stay at home mom and good cook. Her chicken
salad recipe is very popular with her family and friends.
This is a terrific dish for lunch in a green salad or as an entree for dinner along with a
quiche or other vegetable dish. Here's a little more about Sandra
and her active family. Thanks again
Sandra for this yummy recipe!
Hello! The idea for this recipe I was given by my
mother but I have drastically changed it. Now the only similarity is the
chicken. I have found that when the mention of "potluck" comes up it is
one of those dishes that you get asked to bring. Well I am a 23 year old
mother. I would stay at home if I was not so busy with life. Not that I am
employed. We just run between Grandma's house bible study, church, friends' houses
and taking lunch to Daddy at work. I do not have the time to work. I have two
beautiful sons. Oliver who is 3 & 8 months, and Nathanael who is 8 months.
I call them my mother's day presents, since they were both born in May. And I have
my Dax who is 2. She came between the boys. Although she is a puppy, she is
like my daughter.
Sandra's Chicken
Salad
What you need
- 4 chicken
breasts (baked)
- 1 pkg. salad noodles
(egg noodles)
- 1 can olives(sliced)
- Mayonnaise
- All your favorite seasonings
What you do
- Thoroughly season chicken breasts and bake 375* for 45
minutes.
- Remove from oven and cool. Meanwhile, boil salad noodles
according to package directions.
- When chicken is cool slice into small chunks. Place chicken,
noodles, olives, and your choice of mayonnaise into a large bowl and mix well.
- Add all of your favorite seasonings.
This is what I put in:
- Season All (season salt)
- Lemon & Herb
- Salt
- Pepper
- Italian Seasonings
I would try it with these seasonings first; this is what
really makes the salad . You can have as much or as little as you like. This is
great for big groups, a little goes a long way.
Thank you, Sandra
