crockpot.jpg (11942 bytes)fastrecipes.gif (3252 bytes)This week's Recipe of the Week features Creamed Corn, made in your CROCK POT!  This delicious side dish is easily prepared in your crock pot and is perfect for any holiday meal. Creamed corn would make a nice Easter or holiday side dish.  Ham and creamed corn is terrific together- the salt of the ham and the sweet from the corn is delightful!

What you need:

  • 2-one pound bags frozen corn kernels
  • 1-eight ounce package cream cheese (low fat if you like)
  • 2 tablespoons granulated sugar
  • 1/4 cup milk
  • 4 tablespoons butter

What you do:

  1. Place corn, sugar, milk and butter in your crock pot. Cut the cream cheese in small chunks and place on top.
  2. Cook the mixture on low heat for approximately one hour, stirring every 15 minutes.  Stir from the bottom and mix gently. The cheese, milk and butter will form a sauce that will coat the corn.

Spanish Style Beans & Rice
ssklogo.jpg (3943 bytes)This is a non- meat entree full of flavor and very low in cholesterol.  To make the dish even more heart friendly, without cutting out flavor, use olive or canola oil for the oil in this recipe. Beans, whether canned or fresh, are a tremendous way to get the protein you need and the nutrients your body requires to be healthy.  Beans are a tremendous food because they do not contain cholesterol and are full of phytoestrogens which are natural cancer fighters.

Spanakopitta

Rachel says, "Cypriot cuisine is actually a blend of many styles of cooking -- dominant are Greek, Turkish, and Arabic. The receipe for Spanakopitta, I do make quite a lot."

Hungarian Goulash
This recipe features a delicious crock pot Hungarian Goulash.  This tasty dinner can be prepared the night before serving and is sure to be a hit with your hungry crowd.  I remember Hungarian Goulash as my favorite dish when I was a child.  I hope you enjoy this recipe as much as I do
