Eclair Cake

Eclair is a fun and simple way to whip up a yummy dessert to cool off on those warm summer evenings.  Perfect for potluck suppers, church get-togethers, and picnics.

What you need:

  • 1 cup of margarine or butter
  • 2 (3 ounce) packages of vanilla pudding
  • 1 cup of water
  • 3 cups of milk
  • 1 cup flour
  • 1 large tub of a non -dairy topping like Cool Whip
  • 4 eggs
  • Chocolate syrup
  • 1 (8 ounce) package of cream cheese, softened

What you do:

  1. Place the margarine or butter, water and flour in  a pot under medium heat and remove from heat once the mixture begins to boil.    The mixture should form into a ball when stirred.
  2. Add the 4 eggs, one at a time, stirring by hand.    Place mixture (it will spread) on an ungreased 11 x 14 pan and bake at 400 degrees Fahrenheit for 20 minutes. Cool on a rack.
  3. With an electric beater combine the softened cream cheese, vanilla pudding, and milk. Add milk, 1 cup at a time, so cream cheese blends well. Spread the cream cheese mixture onto the cooled crust. Cover with the non-dairy topping .    Drizzle with the chocolate syrup.
