This week's Recipe of the Week features Garlic Mashed Potatoes. The
garlic flavor comes from the roasted garlic added to the potatoes. Choose either red
potatoes or Yukon Gold potatoes for a rich and creamy flavor. What you need:
- 2 pounds of red or Yukon Gold potatoes
- 1 tablespoon of butter
- 1/2 cup of whipping cream
- 1/2 cup roasted garlic
- 1 8 ounce package of cream cheese
- 2 tablespoons of chives
- Salt and freshly ground pepper
What you do:
- Wash potatoes well, peel and quarter. Cook potatoes in
boiling salted water until fork tender. Drain potatoes and return to the pot.
- Using a ricer or a masher, mash the potatoes slightly and
set aside ( you can also use your electric beater too). In a saucepan, heat 1
tablespoon of butter and half the cream and simmer for 1 minute. Add contents of the
saucepan to the potatoes and stir will.
- On low heat, stir in the rest of the cream, add the cream
cheese and all of the roasted garlic.
- Finish with chives, salt and pepper.
How to Roast
Garlic
- Take a head or heads of garlic and remove the cloves. Do not
peel the cloves of garlic.
- Separate the cloves into groups of approximately the same
size (usually about 3 groups will do).
- On medium-low heat and using a non-stick pan,put your first
group of cloves in the pan. Let them sit for about 2 minutes, stir, sit for 2 minutes,
stir, etc.
- Keep watch for scorching on the outside of the cloves.
If you see scorching turn town the heat a little and stir more often.
- The garlic is roasted when the cloves are soft when pressed
by a fork or spatula. The softer the clove, the more roasted the garlic.
- The group of larger cloves will of course take longer than
the smaller cloves. You separate the cloves so that you don't burn your smaller
cloves while undercooking the large ones.

Garlic, Garlic,
Garlic:
Exceptional Recipes for the World's Most Indispensable Ingredient
by Linda Griffith, Fred Griffith

Inspired by the success of their James Beard Award-winning work, Onions,
Onions, Onions, authors Fred and Linda Griffith now take on another stinky
favorite: garlic. Shunned for centuries even in France and Italy because of its strong
flavor and odor, garlic was considered a low-class seasoning, only winning wide acceptance
in cooking outside working-class kitchens after World War II. Garlic, Garlic, Garlic
provides detailed guidance for buying, storing, and preparing garlic, and explains the
pros and cons of using a garlic press. There are also 200-plus recipes, many for ethnic
dishes rich in garlic. There is Brandade, the creamy French dish made with salt cod, and
Spanish Sopa de Ajo, a pungent peasant soup of garlic, bread, and oil with poached eggs.
Even cozy macaroni and cheese is punctuated with three pressed, plump cloves of garlic.
Dessert is not forgotten- -how about ice cream topped with golden, caramelized
Honey-Poached Garlic Sauce for something really different? While only experienced cooks
may want to attempt dishes like Veal Brisket Roasted with Garlic, Onions, and Plums, any
garlic lover with modest skills can whip up the Special Marinara Sauce or grill the Flank
Steak with Balsamic Vinegar Marinade. |

Homemade Mashed Potatoes
Today's restaurants are serving all kinds of
variants on this traditional recipe- from garlic mashed potatoes to chicken mashed
potatoes. This week we are paying homage to the spud that made it all happen- good ole
fashion Mashed Potatoes. Freshly made creamy mashed potatoes are nothing like the boxed
variety. They are so rich, and fluffy that you can lose your fork in them. The
little bit of extra time it takes to make homemade mashed potatoes is worth it. Ask
your kids!! |
