click here to find out more about Suebaking.jpg (7898 bytes)bread.jpg (5702 bytes)This week's Recipe of the Week features a terrific "any meal" dish.  Ham and Cheese Bread Bake is a complete meal all in one casserole!  This makes a terrific breakfast or brunch.  It can be made a day in advance.

Ham and Cheese Bread Bake is also a quick dinner choice too.

Ham and Cheese Bread Bake

What you need:

  • cheese.jpg (5628 bytes)1 tablespoon of butter or margarine
  • 1 medium size onion chopped finely
  • 1 package ( 10 ounces) frozen asparagus tips, chopped broccoli, or green peas, thawed and drained
  • 1 pound baked or boiled ham, cut into 1 inch cubes
  • 4 slices whole heat bread, cut into 1 inch squares
  • 3 large eggs
  • 1 large egg white
  • 2 cups of milk
  • 1 cup of coarsely shredded Monterey Jack or Cheddar cheese
  • 1/2 teaspoon each of salt and black pepper
  • 1 tablespoon of Dijon mustard

What you do:

  1. Preheat your oven to 350 degrees.  Melt the butter in a large non-stick skillet over medium heat.  Add the onion and sauté, stirring for 2-3 minutes or until slightly softened.  Add the asparagus tips and cook, stirring for 2 minutes.  Add the ham and bread and toss to mix.  Set aside.
  2. In a large bowl, beat the eggs and egg white with the milk, all but 2 tablespoons of the cheese, the salt, pepper, and mustard, just enough to combine, don't over stir.  Stir into the skillet mixture.
  3. Pour all into a greased heat and flame proof 2 -quart shallow baking dish and sprinkle with the remaining cheese.  Cover with the foil and bake for 30-35 minutes or until a  knife in the center comes out clean.
  4. Transfer the dish to the broiler and broil 4 inches from the heat for 2 minutes or until lightly golden.  Serves 4.

Sue's Yeast Rolls
The one thing that is sure to be on our dinner table is yeast rolls.  It is one of my favorite breads. These rolls are light, fluffy, and easy to make. They are a family tradition in my house ! Watch them disappear! I hope you love these as much as I do !!
