This delicious dish only takes 30 minutes to make - faster than the pizza delivery boy and more nutritious (but don't tell the kids that).  If you do not want to use ham you can substitute cooked chicken or strips of tofu.

What you need:

  • pasta.jpg (4929 bytes)2 1/2 cups of uncooked pasta
    - you can use penne or spirals work well
  • 1 tablespoon of butter or margarine
  • 1 cup of frozen corn
  • 1/2 cup of sliced green onions
  • 1 cup of cooked ham cut into 1 inch thin strips
  • 1 medium zucchini cut into 1 inch thin strips
  • 4 Italian plum tomatoes, cut into quarters, about 2 cups
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of freshly ground pepper
  • 1/2 cup of half and half
  • 1/4 cup of freshly grated Parmesan cheese

What you do:

  1. Cook the pasta according to the manufacture's directions. Drain, add a little butter or oil and keep the pasta warm by covering with a clean towel.
  2. Melt the margarine or butter in a nonstick pan over medium-high heat. Add the corn, zucchini- cook for 4-6 minutes or until the vegetables are crisp tender, stirring occasionally.
  3. Add the cooked pasta and all the remaining ingredients except the cheese. Reduce to medium heat- cook and stir 3-5 minutes or until thoroughly heated. Stir in the cheese and serve.

The biscuits are easily made in the morning or can be made the night before. The eggs are a tasty and quick breakfast that even the kids can make. All you need for a complete breakfast or late night snack, is your microwave and eggs!
