S. Bonds. This tasty entree can be made ahead of time and served in minutes. Western
Meal In One is ideal for all you last minute shoppers who don't have time to spend in the
kitchen : ).
What You Need:
- 1 lb. ground beef
- 1T vegetable oil
- 1 clove garlic
- 1/2 c onion and green pepper
- 1t each salt and chili powder
- 16 oz. red beans, drained
- 2 1/2c tomatoes with juice, chopped
- 3/4 c uncooked rice
- 3/4c grated cheese
- 1/4 c sliced black olives
What You Do:
- Brown beef in oil and garlic, add onion & pepper; cook
until onion is transparent.
- Drain off fat. In a 2 quart casserole, combine meat mixture,
salt, chili powder, beans, tomatoes & rice.
- Bake covered at 350 degrees for thirty minutes. Uncover and
sprinkle with cheese & olives; bake for fifteen minutes. more.
Yields 6-8 servings.
