click here to find out more about SueThis week's Recipe of the Week features a wonderful Meat Loaf.  This dish can be made ahead of time and place in the refrigerator or freezer until you are ready to bake it. This recipe was shared with us from Terry a terrific cook and member of our Families-First community.

What you need:

  • 1- 2 pounds of ground beef
  • 1 onion, finely chopped
  • 1 egg slightly beaten
  • 1 green (bell pepper) finely chopped
  • Saltine crackers - about 20, smashed, but no too fine
  • 1/4 cup milk (can use canned or skim)
  • salt and pepper to taste
  • Bacon- about 4 strips and catsup

What you do:

  1. Mix ingredients the first 5 ingredients about with hands or a fork.  Form this mixture into a "brick shape".
  2. Top with the strips of bacon and pour catsup generously on top.
  3. Bake at 350 degrees uncovered for 50 minutes. Serve with salad and vegetable.

    This recipe serves 2 adults and 1 child - double the recipe for a larger family

    NOTE: I make these up 6 at a time and wrap and freeze.  Place in oven after work frozen for 1 hour uncovered.   YUM YUM YUM

Judy's Redeye Chili

It gets it's name from the "secret ingredient", coffee, which is a key ingredient in Redeye Gravy.. Judy says, "I am a Chile-head from way back! I am a native of Columbus, Mississippi, a historic city noted for our antebellum homes. My main interests are cooking and digital photography. My favorite things to cook with are chile peppers so I have lots of Mexican and spicy recipes. Y'all come back real soon!"

Everyone's Casserole
This is a casserole that is perfect for the whole family. While your pot is hot you won't be.  This dish will let you get out of the kitchen and still have a tasty dinner after an afternoon of fun in the sun.

Minestrone Soup
When I think of autumn I think of good savory foods, like stews, homemade breads, and soups. There is nothing better on a cool fall evening than a stemming, delicious bowl of soup, Minestrone soup. I made this recipe even faster to prepare by putting it into microwave form. This way you can make your soup and eat it too !
