This week's Cookie of the Week is brought to us by Clayton.  These mint cookies are a family favorite and very popular around holiday time. Happy holidays and thanks again Clayton! Here is a little more about her.

Clayton is a 47 year old single lady who loves to bake and cook in her small Ohioan town.  Mint cookies was one of her granmdmother's recipes. She's always doing some kind of cooking for myself and others.family and friends.

Mint Cookies

What you need:

• 21/2 cups all purpose flour
• 1/2 cup shortening
• 3/4 cup butter softened
• 3/4 cup sugar
• 1 tsp. vanilla
• 1tsp. spearmint oil
• 1/2 tsp.salt
• 1 tsp.baking soda
• 1 tsp.baking powder
• 2 eggs beaten

What you do:

1. Blend butter and shortening until light and fluffy. Mix in sugar, salt, and baking soda, baking powder, blend vanilla, spearmint oil, and eggs.
2. Shape into balls and place on a ungreased sheet bake at 350 for about 8 to 10 minutes.
