This
week's dessert of the Week features an old family favorite, Nutty Rice Pudding. Nutty rice
pudding is a delicious treat and well worth the little bit of extra time to prepare. Some
folks like to eat this pudding warm while others prefer it chilled.
This recipes makes 4 servings.What you need:
3/4 cup of long grain rice
6 cups of boiling water
1 quart of milk ( get the whole milk)
1 teaspoon of salt
2 tablespoons of melted butter
2 tablespoons of sugar
1/2 teaspoon almond extract
Ground nutmeg and cinnamon
1/2 cup of coarsely ground blanched almonds- optional
Garnish:
1 cup heavy cream, whipped
What you do:
- Place the rice in a strainer and our the boiling water over
the rice. Drain well. Place the rice, milk, and salt in a double boiler and cook,
covered, for 1 to 1 1/2 hours, or until all is thick and creamy. Stir in the butter,
sugar, almond extract, nutmeg and cinnamon, and almonds.
- You can serve this either warm or chilled with the whipped
cream.
