This
recipe features the traditional Irish soda bread with a twist. We have added oatmeal to
this tasty loaf. The oatmeal gives the bread a delicious texture and weight. Hope you
enjoy it !What you need:
- 1 2/3 cups of all-purpose flour
- 3/4 cup quick cooking rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons margarine or butter
- 1 beaten egg
- 2/3 cup buttermilk or sour milk
- 1 beaten egg
What you do:
- Grease a baking sheet; set aside. In a large mixing bowl
stir together flour, oats, baking powder, baking soda, and salt.
- Using a pastry blender, or fork, cut in margarine or butter
till mixture resembles coarse crumbs.
- Make a well in center of the dry mixture. Stir together one
beaten egg and buttermilk or sour milk, then add mixture all at once to the dry mixture.
Using a fork, stir just until moistened ( Dough will be sticky).
- Turn the dough out onto a well-floured surface. Quickly
knead dough by gently folding and pressing dough for 10 to 12 strokes until dough is
nearly smooth. On the prepared baking sheet, shape dough into a 6 inch round loaf.
- On the top of the loaf, cut a 4 -inch cross, 1/4 inch deep.
Brush with the one remaining beaten egg. Bake in a 375 degree oven about 35 minutes or
till done. Remove from baking sheet and serve warm. Makes 1 loaf.
