Power Bars

fastrecipes.gif (3252 bytes)This week's Dessert of the Week features easy to make Power Bars.  These are perfect for your kids' lunches, after school snacks, and as a convenient traveling snack.

Ask the kids to help make the Power Bars , this recipe is simple enough for them to get started on their road to cooking : ).

What you need:

  • 3/4 cup of butter (1 1/2 sticks), plus 2 teaspoons for the pan, at room temperature
  • 1/3 cup of packed brown sugar
  • 1/4 cup of all-purpose flour
  • 1 teaspoon of vanilla extract
  • 5 cups of unsweetened granola

What you do

  1. Preheat the oven to 375 degrees.  Place oven rack in the center of oven. Using a piece of plastic wrap grease with 2 teaspoons of butter   a 9-inch baking pan.   Make sure to grease the bottom and sides of the pan.
  2. Put 3/4 cup of butter a small saucepan; heat over medium heat until the butter is melted.  After the butter is melted pour into a mixing bowl.   Add the brown sugar, flour, and vanilla to the butter and stir thoroughly with a wooden spoon.
  3. Add the granola and stir very well to coat the granola with the butter mixture.  Spoon the granola into the prepared baking pan.  Press it flat using the back of a spoon or your hand.
  4. Put the pan in the oven and bake until the top is golden brown, 15-20 minutes.  remove from the oven and transfer the pan to a cooling rack.   Let it cool completely, at least 30 minutes, before cutting it.
  5. Using a sharp knife, cut the granola into 4 strips lengthwise and 4 strips crosswise.  Remove the bars from the pan with a spatula.

The biscuits are easily made in the morning or can be made the night before. The eggs are a tasty and quick breakfast that even the kids can make. All you need for a complete breakfast or late night snack, is your microwave and eggs!
