A stew of tomatoes, eggplant, and squash, with endless variations, this dish gets its distinctive flavor from the slow cooking. Serve as a vegetable or a sauce for pasta.

What you need:

  • summer.jpg (3674 bytes)1 medium eggplant
  • 1/4 cup olive oil
  • 1 medium onion, peeled and thinly sliced
  • 2 cloves garlic, minced
  • 2 medium zucchini, slice 1/2 inch thick
  • 1 medium green pepper, thinly sliced
  • 5 medium tomatoes, peeled and quartered, or 1 can (28 ounces) tomatoes drained
  • 1/4 cup chopped parsley
  • 1 teaspoon basil
  • 1/2 teaspoon pepper

What you do:

  1. Peel eggplant and cut into 1-inch cubes.
  2. Heat oil in a large saucepot. Add onion and garlic and cook until almost tender.
  3. Add eggplant, zucchini, and, green pepper; cook and stir 2-3 minutes.
  4. With a slotted spoon, transfer vegetables to your crock pot. Add tomatoes, parsley, and dry seasonings; stir.
  5. Cover and cook on Low 8-10 hours.

She says, "I have been making this for about 25 years.  I love all kinds of Italian food and make quite a lot of it.  I do not remember where I originally got this recipe from, all I know is that it is a keeper and is one of my daughters favorites."

Calcutta Chicken
in spinach & yogurt sauce

Her Calcutta chicken in spinach and yogurt sauce is perfect for dinner. Swedish Parsley Chicken

Spring chicken was a classical Sunday dinner. They filled it with parsley and butter and fried it whole in the oven, so that they were tender and juicy."
