recipe comes from a member of our momscooking community, Paula
Winemiller, who donated this recipe as part of our cookie collection.
She says:
I got this recipe from my mother-in-law long time ago.We
use it alot in the summer because of the
fresh rhubarb we have growing.I use it in the winter sometimes if I have some rhubarb in
the freezer.
What you need:
Crust &
Topping
- 3 cups of rhubarb
- 1 1/2 cups flour
- 1 cup butter
- 1 1/2 cups oatmeal
- 1/2 tsp soda
- 1 cup brown sugar
- 1/2 cup nuts
Filling
- 1/4 cup water
- 1 1/2 cup sugar
- 2 T cornstarch
- 1-3oz. pkg strawberry Jell-O
- 1 tsp. vanilla
What you do:
- Mix rhubarb,sugar,cornstarch and water. Cook 'til real
thick.Cool and add vanilla. Mix flour oatmeal butter,brown sugar,soda together 'til
crumbly add nuts.
- Pat 1/2 mixture into 9 x13 pan press down spread cooled
rhubarb mixture over crust and sprinkle the dry gelatin over top.Put other half of crumbs
over this.
- Bake 375 for 30-35 min. until light tan color.
