Strawberry Delight

click here to find out more about SueThis week's Dessert of the Week features a wonderful fruit parfait. Strawberry Delight is creamy, cool, and a sweet way to end dinner.

You could substitute blueberries or raspberries for the strawberries.  This old fashioned dessert can be made the night before or within an hour of being served.

What you need:

  • 1 pint of fresh strawberries, blueberries, or raspberries, rinsed and hulled.
  • 1/4 cup of honey
  • 1 tablespoon of strawberry or red raspberry jam ( look for the seedless kind)
  • 2 teaspoons of freshly squeezed lemon juice
  • 3/4 cup of heavy cream
  • 1/4 cup of low fat yogurt
  • 4 large strawberries, thinly sliced for garnish

What you do:

  1. Place the whole strawberries and 3 tablespoons of honey in a food processor or blender and puree for about 30 seconds.
  2. Place the mixture to a medium-sized nonmetallic saucepan, add the jam, and boil over moderate heat, uncovered for 3 minutes.  Remove from the heat and stir in the lemon juice.  Place in a small bowl, cover with plastic and chill- about and hour or if preparing in advance overnight.
  3. Less than an hour before serving, combine the heavy cream and yogurt in a medium sized bowl and whip until frothy.  Drizzle in the remaining honey and beat until soft peaks are formed.
  4. Gently fold the whipped mixture into the strawberry mixture and spoon into 4 parfait or wine glasses.  Serve at once or refrigerate and serve within 1 hour.  Garnish with sliced strawberries.
