This Irish classic will make a great addition to your St.Patty's Day celebration or just a fun way
to be a little Irish and is a great way to
engage the kids in some creative baking activities while you do Irish crafts.
What you need:
- 6 cups of all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons of baking powder
- 3 tablespoons of cornstarch
- 2 teaspoons of sugar
- 1 teaspoon of salt
- 2 1/2 cups of buttermilk
What to do:
- Preheat oven to 375 degrees.
- Add all of the dry ingredients in a large bowl and mix well.
- Pour all of the buttermilk into the bowl at once and stir,
using a wooden spoon, just until a soft dough is formed.
- Pour the contents of the bowl out onto a plastic counter and
knead for a minute or so until everything comes together.
- Divide the dough into 2 portions and shape each into a round
loaf, pressing the top down a bit to just barely flatten it. Place the loaves on a large
ungreased baking sheet.
- Sprinkle some additional flour on the top of each loaf and,
using a sharp paring knife, make the sign of the Cross in slashes on the top of each.
- Allow the loaves to rest for 10 minutes and then bake on the
middle rack of the oven for 40 minutes, or until the loaves are golden brown.
- Cool on racks.
Marion's Sour Cream & Dill Pasta
This pasta dish goes beautifully with salmon and other fish-dishes and come from our
world-traveling friend, Marion McDowell and comes by way of County Tyrone, Northern Ireland and Alaska.
She says, "I originally got a couple of recipes off the web for a creamy dill sauce,
and then did a bit of creative experimentation based on those and came up with this dish.
It serves 4 as a side dish or 2 ala carte. Enjoy!"
Creamy Potato Soup
This warm soup is a perfect selection for lunch or dinner. My
children LOVE potatoes so I know this will be a very popular dish along with home baked
rolls -you can find the recipe for Sue's
Yeast Rolls in our library
Irish Soda Bread
with Raisins
This recipe features a delicious Irish soda
Bread. This bread is wonderful for breakfast with coffee or tea and delightful as an
afternoon snack. You can use either black or golden raisins for this recipe.
St. Patty's Day
Shake
This
dessert features a St. Patrick's Day treat. This delicious milkshake is made in minutes
and is a great way to say Erin Go Braugh! You can substitute frozen vanilla yogurt or any
of the fat free ice creams for the regular ice cream. As far as the milk is concerned, you
can use any type you and your family prefers- skim milk, low fat etc... Peppermint extract
gives a cool minty flavor to these shakes. You can add as little or as much as your taste
buds prefer. |
The Luck of the Irish

Is it based on a four leaf clover or is it really the little known power of
the potato?
The humble spud may be your secret to immortality.
Okay, perhaps we have overstated it a bit, but don't you really like potatoes?
