Irish Soda Bread with Raisins

click here to find out more about SueThis week's Recipe of the Week features a delicious Irish soda Bread. This bread is wonderful for breakfast with coffee or tea and delightful as an afternoon snack. You can use either black or golden raisins for this recipe.

Irish Soda Bread

What you need:

4 cups of all purpose flour 1 teaspoon of salt 1 teaspoon of baking soda 1 teaspoon of baking powder 2 cups of dark or golden raisins 1 3/4 cups of buttermilk 1 large egg 1 tablespoon of heavy cream

What you do:

  1. Preheat your oven to 350 degrees. Grease a baking sheet with butter. In a large bowl, whisk together the flour, salt, baking soda, and baking powder until combined. Pour in the buttermilk, all at once. Stir with a fork until all the buttermilk is absorbed and the mixture starts to hold together. It should look like biscuit dough.
  2. Press the dough into a round dome shaped loaf (still in the bowl) using your hands. It should be about 8-9 inches in diameter ( across). Lift the loaf from the bowl and place it on the greased baking sheet.
  3. Mix the egg and cream together in a small bowl. Brush the mixture over the top of your loaf using a brush. Cut a cross on the top of the loaf, about 1/2 deep, using either sharp scissors or a razor.
  4. Place the baking sheet into the oven and bake until half done, then rotate the sheet and continue to bake. When the bread is golden brown and a toothpick comes out clean when inserted into the bread ( about 70 minutes) the bread is done.
  5. Remove from baking sheet when done and allow to cool completely on a wire rack.
