This Recipe of the Week features Spinach and Mushroom Stir Fry.
This very easy and delicious dish is very satisfying as a lunch and coupled with a grilled
chicken breast and rice makes a perfect dinner or it is good all by itself.
I use fresh spinach and button mushrooms. Use a colander to thoroughly rinse
spinach, this should go quickly and don't forget to pat dry with a paper towel.
The amounts of ginger and garlic for this recipe can be adjusted to your taste.
This recipe makes 4 servingsSpinach and
Mushroom Stir Fry
What you need:
- I bunch or 1 pound of fresh spinach
- I pound of button mushrooms
- 2 tablespoons of butter
- 1 tablespoon of minced garlic
- 1 tablespoon of minced fresh ginger root
- Soy sauce to taste
What you do:
- Wash and pat dry the spinach, put to the side.
With a damp paper towel brush clean the mushrooms and slice. Mince garlic and ginger root,
place to the side.
- In a large skillet under medium high heat add the butter.
Add mushrooms and garlic and ginger. Sauté until the mushrooms are browned.
- Add the spinach, it will wilt quickly- about 2 minutes.
Add soy sauce, stir. take off the heat and serve.

Potstickers
(Chinese Dumplings)
Potstickers are delicious Chinese
dumplings that can be served as an appetizer or entree. I make them every New Year's Eve
along with fried rice and they are practically gone when I sit down to eat ! They are that
good. My local Chinese restaurant creates heavenly potstickers which are steamed and I
believe these are very close to their delicious bundles of heaven. I hope you enjoy these
as much as my family does.
