 This is a great pair of Italian recipes from Cyndee
who offers this baked blend of honey and
nuts along with another zesty lemon
recipe. She says:
I have been making this for about 25 years. I love
all kinds of Italian food and make quite
a lot of it. I do not remember where I originally got this recipe from, all I know
is that it is a keeper and is one of my daughters favorites.
Strufoli (Italian
Honey Balls)
What you need:
- 2 C flour
- 2 eggs
- 1/4 t salt
- 2 C oil (for frying)
- 1/2 C Honey
- 1/2 C sugar
- 2 T pine nuts or slivered almonds
- 1 T candy sprinkles
What you do:
Place 1 C flour in large bowl.
- Add eggs and salt. Mix and knead gently, adding enough flour
to make a soft dough. Divide in half.
- Roll each half into 1/4" strips.
- Cut each strip into small (1/4" to 1/2") pieces
and roll into little balls.
- Spread on floured board.
- Heat oil in deep
frying pan over medium heat until hot. Fry balls, a few at a time, for 1 to 2
min or until golden. Drain.
- Blend honey and sugar in deep frying pan. Stir constantly
over low heat for about 5 min or until sugar has dissolved and mixture is smooth.
- Add fried balls and stir with wooden spoon until coated.
Arrange in mound on serving plate and decorate with nuts and sprinkles. Let cool before
serving.

Fiadone
What you need:
- 1 lb fresh cheese, such as ricotta
- ½ C sugar
- 2 egg yolks
- 1 egg
- 1 lemon,
zested
- 1 lemon, juiced
- ½ C sultans, or golden raisins
- 1 (9") pie crust, unbaked
What you do:
Preheat the oven to 350ºF.
- In a mixing bowl, combine the cheese, sugar, yolks, egg,
lemon zest and lemon juice. Mix well. Fold in the sultans.
- Pour into the prepared pie crust. Place in the center of the
oven and bake for about 30 min or until the top is golden brown.
- Remove from the oven and cool completely.
Serves 8
Marylina's Panetton Cakes
 This is a recipe from Marylina who has made a
holiday tradition on Christmas Eve with this recipe. It is a delightful blend of lemon and
vanilla with almonds, raisins and mixed dried fruits that will make a great addition to
your holiday table. She says, "This recipe I have made it for the last few years, for
my children and their families. We had it on vacation in Greece and wanted to share it
with the children. Now it is something we have Christmas
Eve when we have our annual hay ride out here at our small ranch in
California."
Italian Biscotti
Holiday time is the best season for cookies! Families usually have
their favorites, whether it's chocolate chip, shortbread or pinwheels. Here's an Italian
cookie recipe that I bake thorough out the year. Biscottis are double baked cookies that
are fabulous with milk or any warm beverage- perfect for dunking! For Christmas I dip the
ends of the cookies in melted semi-sweet chocolate and allow to harden. They are barely in
the kitchen for two days after that!
Cannoli
This is one of my most favorite childhood
desserts; cannolis. This Italian pastry is very popular in New York bakeries.
I remember as a child growing up on Long Island seeing these delicious confections laid
out in the cooled glass Cream Puff bakery cases. The ends were sprinkled with lime green
or multicolored sprinkles. They were incredibly good. |
