Judy's Redeye Chili
 This is a recipe from Judy offered up by a member of our
momscooking discussion group for our ChiliUSA collection.
It gets it's name from the "secret ingredient", coffee, which is a key
ingredient in Redeye Gravy.. Judy says, "I am a Chile-head from way back! I am a
native of Columbus, Mississippi, a historic
city noted for our antebellum homes. My main interests are cooking and digital
photography. My favorite things to cook with are chile peppers so I have lots of Mexican and spicy recipes. Y'all come back real
soon!"Brachiole (Italian Steak Rolls)
This recipe is brought to you by Joe Mallas
who is a busy executive who travels a great deal. As a bachelor Joe has developed his own
cooking style and preferences. In fact, this recipe is from his Italian uncle's cookbook.
Joe's uncle decided to create a cookbook which includes all the recipes from both sides of
his family. As Joe tells it , "My uncle (Italian ancestry) wrote and compiled all of
his side of the family recipes and "my" side of the family (Russian ancestry)
recipes into a "family" cookbook". Brachioles is a wonderfully tasting main
entree, served with spaghetti or can be included in your tomato sauce like meatballs.
Reuben Sandwich
This week's Recipe of the Week is an old New
York favorite, the Reuben Sandwich. My husband, who is originally from New York, loves
these sandwiches. We like to use a little more corned beef than I have written up in this
recipe. You can adjust this to the amount you prefer.
Diane's Awesome Stuffed Peppers
Diane who is a regular contributor of recipes to momscooking has
given us another easy-to-make recipe with a Mexican flair
featuring tomatoes, cumin, and other spices with beef and rice, placed into beautiful
green peppers. It's nutritious, fun and will be a big hit with your family.

Beef Barley Veggie Soup
This stew combines the flavor of onions, bay leaves and thyme with a
wonderful classic "stick-to-your-ribs" combination of beef and barley. This stew
can be served the same day it is prepared or put into the freezer for a great tasting
dinner when you are in a hurry. Either way I'm sure you'll find this delicious!

Taco Salad
Here is a recipe that is perfect for our hot weather. Taco salad is
easy to prepare and will keep you out of the heat and into the swim of things. You can
substitute the ground beef with ground turkey or chicken. For those that are vegetarians,
tofu cut into small chunks will work well too. Hasta luega!
Meatball Noodle Soup
This is a total meal all in one pot!. You can
substitute crushed tomatoes or chicken broth for the wine in this recipe. Meatball Noodle
Soup can be made ahead of time so you'll be able to catch some rays this summer, and I
don't mean the ones from the microwave!
Meat Marinade
This weeks' Recipe of the Week features a
delicious meat marinade. It's time to get ready for the BBQ season! I enjoy
using marinades to improve the flavor of meats like poultry, beef, and pork for outdoor
grilling. They would also work well for oven-broiling.
Leftover Beef Burrito
This week's Recipe of the Week is brought to
us by mom, cook, and Families-First community friend Lani : ). She has a fabulous
idea for leftovers- this recipe takes boring roast beef leftovers and turns them into
delicious burritos! She says, "When my children were little they hated leftovers. My
father-in-law gave this recipe to me, when my son was three. Both my children are grown
now. It has been there favorite leftover recipe throughout the years. It is truly an
'Americanized Burrito'."
Kerr Family Chili
This recipe comes from a member of our
momscooking community, Kim Kerr, who donated this recipe as part of our ChiliUSA
collection. She says, "This chili recipe was one that I grew up on as a child. My mom
was the one who put it together years ago. I still to this day like it on cold, chilly
days. My husband Ron enjoys it also, unfortunately my kids don't like beans. The
recipe tends to make quite a bit but the chili tastes so much better after it has sat a
few days in the refrigerator and then is reheated back up.
Italian Beef Soup
This week's Recipe of the Week is brought to
us by Amanda Gideon. This low fat Italian Beef soup is a family favorite. Amand2a Gideon
is a member of our online Fit-and-Trim support group. She received many requests for this
recipe from the group. Add a green salad and a whole wheat roll and you'll have a tasty
and nutritious dinner.
New York Chili
As
a native New Yorker I have found chili to always include light red kidney beans. My recipe
makes six servings and can be garnished with chopped scallions and shredded cheddar
cheese.
