Ev's Cheesy Chicken & Broccoli Casserole

Marion's Whiskey Chicken
This distinctive chicken dish comes from our world-traveling friend, Marion and comes by way of County Tyrone, Northern Ireland and Alaska. She says, "Most of the alcohol escapes during the cooking process, but enough of the flavours remain to give the sauce its distinctive taste."

Swedish Parsley Chicken
This week's Recipe of the Week is brought to us direct from Sweden!  Parsley Chicken is a delicious recipe from Bella, an active member of our momscooking online group. She says, "In Sweden it was common in the olden days to eat chicken in spring. Spring chicken was a classical Sunday dinner. They filled it with parsley and butter and fried it whole in the oven, so that they were tender and juicy."

Chili Barbequed Chicken

Meat Marinade

I do not eat a lot of pork and was on a diet at the time I came up with this alternate version. I also added a hint of my own cooking in, to make it more than just a meat substitution. This week we feature his recipe for Mexican Chicken Divan.  This dish is prepared a day ahead of time so that it makes dinner a breeze the next day. Mexican Chicken Divan is super for potluck suppers and holiday parties. This recipe makes 4-6 servings but for   a larger crowd just double the recipe!
