Terry's Healthy Cincinnati Style
Chili
 This is a
recipe from Terry offered up by a member of our momscooking discussion group for our ChiliUSA collection. Terry developed this recipe in the
Cincy Ohio area. It started as a regional favorite spread on top of spaghetti
topped with cheddar cheese and then Terry came up with this version which is a great
change of pace from the regular "skettie".Nana's Ketchup Tex-Mex Chili
This recipe is offered up by a member of our momscooking
discussion group for our ChiliUSA collection. She
says that this is a family favorite and it's "secret ingredient" is ketchup
which has been "guarded by Tex-Mex range cooks for years." She also says that
"it is actually my mother in law's recipe. At 94 years old she can't remember where
she obtained the recipe, she sometimes becomes so informative that she can ramble on for
hours."
Loretta's Party Chili
This recipe from Loretta is offered up by a member of our
momscooking discussion group for our ChiliUSA collection.
Loretta's says that this is a family and party favorite which she often uses at her Super
Bowl Parties and she says that the "secret ingredient" is the canned chilis that
give it the little "pizzazz" it needs.
Judy's Redeye Chili
 This is a recipe from Judy offered up by a member of our
momscooking discussion group for our ChiliUSA collection.
It gets it's name from the "secret ingredient", coffee, which is a key
ingredient in Redeye Gravy.. Judy says, "I am a Chile-head from way back! I am a
native of Columbus, Mississippi, a historic
city noted for our antebellum homes. My main interests are cooking and digital
photography. My favorite things to cook with are chile peppers so I have lots of Mexican and spicy recipes. Y'all come back real
soon!"
Turkey Chili
This recipe is sure to be a hit in your family. Turkey chili
is hearty enough for the coldest winter day yet low enough in fat where you can enjoy it
too. My hubby loves chili and can't tell the difference between this satisfying dish
and the "other" chili. Topped with fat free sour cream, shredded low fat
cheddar cheese, and chopped scallions this is a delicious dinner.
Tanya's Homemade BBQ sauce
 This is a
recipe for homemade barbecue sauce offered up by a member of our momscooking discussion
group. Tanya says, "This is a wonderful recipe that I created for my father a few
years ago. He loves a good B.B.Q But does not like any of the store brands of sauce. I
make him this recipe every spring and he enjoys it to the very last drop."
Nancy's Tex Mex Dip
This week's Recipe of the Week is brought to us by the low- fat
cooking guru Nancy Baggett. As a long time writer and chef she has written many wonderful
and popular cookbooks. Her latest book, 100% Pleasure
from Appetizers to desserts, the low-fat cookbook for people who love to
eat, contains hundreds of tasty and easy to prepare recipes. Nancy's Tex-Mex Dip can be
served as an appetizer or as a snack for the kids.
Beverly's Best Chili
This recipe comes from a member of our momscooking community,
Beverly, who donated this recipe as part of our ChiliUSA collection.
She says, "I have been cooking all my life. It is one of my favorite pastimes. This
particular dish has developed along the years. I have always loved mushrooms, so I added
them. I experimented around until I got a recipe that was just right for everyone in the
family including the sons who liked cheese or ketchup on everything. We really enjoy this
dish and I hope you will too, especially on a cold snowy night up here in New York on Lake Ontario.
Newkirk Family New Mexican Red Chili
This recipe comes from Dolores Newkirk, who
says, "This recipe has been in our family for many years....it has been a family
basic. In New Mexico, we consider RED CHILE a staple like most people eat
bread with there meals. Chile, goes with everything, side dish or the main
dish. My dad still makes the very best Red Chile! My Abuelita(grandma) who is
95 years young in November makes hers with dried venison meat or elk! It is beyond
awesome....My mom and dad's families both originated from Spain and settled in what was
then Mexico, now New Mexico. Chile, is like having water at every meal.
Without it, there is no flavor or taste...
Taco Salad
Here is a recipe that is perfect for our hot
weather. Taco salad is easy to prepare and will keep you out of the heat and into the swim
of things. You can substitute the ground beef with ground turkey or chicken. For those
that are vegetarians, tofu cut into small chunks will work well too. Hasta luega !
Chili Barbequed Chicken
This week's Recipe of the Week features Chili
Barbecued Chicken. This dish combines the great taste of chicken along with the zest
of chili.
Kerr Family Chili
This recipe comes from a member of our
momscooking community, Kim Kerr, who donated this recipe as part of our ChiliUSA
collection. She says, "This chili recipe was one that I grew up on as a child. My mom
was the one who put it together years ago. I still to this day like it on cold, chilly
days. My husband Ron enjoys it also, unfortunately my kids don't like beans. The
recipe tends to make quite a bit but the chili tastes so much better after it has sat a
few days in the refrigerator and then is reheated back up.
Dodge Family Chili
This recipe comes from Judy Dodge from Dunwoody, Georgia who has
donated a a wonderful family chili recipe for you to try. She says, "Mom Dodge (My
husband's mom) always made this while we were traveling from Atlanta to Nashville so it
would be ready for us when we arrived on Friday night no matter what time we got there to
visit for the weekend. She usually served cornbread (with real corn in it) and cole slaw
and we looked forward to enjoying that each visit."
New York Chili
As
a native New Yorker I have found chili to always include light red kidney beans. My recipe
makes six servings and can be garnished with chopped scallions and shredded cheddar
cheese.
