 This
recipe comes from one of the members of the our momscooking support group. Kim says,
"This is the Italian answer to fruitcake. A lovely textured, citrus infused fruitcake
or bread that will satiate an appetite for something sweet and delicate to accompany tea
or coffee."
Sue's Aglio e Olio
 This recipe
comes from Sue who is a vegetarian and an adventurous experimenter who loves to cook with
her son. This recipe is a delightful blend of lots of garlic, chili peppers and Parmigiano
Reggiano. She says, "My seven year old son and I were making a recipe from your
website the other day (Emeril's My Oh My Spaghetti
Pie) and he insisted on sending in the recipe for Aglio e Olio. My family
loves it! I believe it is a traditional Italian recipe. The original called for chicken
stock, but I make it with seasoned salt because we are vegetarian.
We enjoy experimenting with new recipes, especially from other cultures, and I am looking
forward to trying more recipes from your site."
Emeril's My-Oh-My Spaghetti Pie
 This featured recipe comes to us from the famous chef Emeril
Lagasse, who has a new book that will help kids enjoy cooking for themselves. It is called
"Emeril's There's a Chef in My Soup." He has allowed us to share some of his
recipe secrets with you for FREE in this new series on the Momscooking support group.
Emeril says, "This layered pie is a really kicked-up idea for leftover spaghetti
noodles! I use mozzarella cheese in this recipe, but go ahead and make yours with whatever
cheese you like best. Cheddar, Monterey Jack, or even smoked Gouda would be great."
Cannoli
 This is one of my most favorite childhood desserts; cannolis.
This Italian pastry is very popular in New York bakeries. I remember as a child
growing up on Long Island seeing these delicious confections laid out in the cooled glass
Cream Puff bakery cases. The ends were sprinkled with lime green or multicolored
sprinkles. They were incredibly good. Included in this updated recipe are tips of the
trade from many of our momscooking members on ways to make the shells better and to keep
your filling from being runny.
Ratatouille
Ratatouille is a Mediterranean dish with a
French name, most often associated with Provence, but with definite an Italian influence.
A stew of tomatoes, eggplant, and squash, with endless variations, this dish gets its
distinctive flavor from the slow cooking. Serve as a vegetable or a sauce for pasta.
Cyndee's Strufoli & Fiadone
This
is a great pair of Italian recipes from Cyndee
who offers this baked blend of honey and nuts
along with another zesty lemon recipe. She says,
"I have been making this for about 25 years. I love all kinds of Italian food and make quite a lot of it. I do not
remember where I originally got this recipe from, all I know is that it is a keeper and is
one of my daughters favorites."
Italian Biscotti
Holiday time is the
best season for cookies! Families usually have their favorites, whether it's chocolate
chip, shortbread or pinwheels. Here's an Italian cookie recipe that I bake thorough out
the year. Biscottis are double baked cookies that are fabulous with milk or any warm
beverage- perfect for dunking! For Christmas I dip the ends of the cookies in melted
semi-sweet chocolate and allow to harden. They are barely in the kitchen for two days
after that!
Sue's Shrimp Scampi
I've made this about a hundred times and my whole family loves
it. The trick is to keep the fingers away form the shrimp as you are frying
them. The kids and also the hubby find their way onto the platter of cooked,
seasoned shrimp and I have to shoo them away, otherwise there wouldn't be any for dinner :
).
Chicken Cacciatore
 This
recipe is a super quick and delicious dish called chicken cacciatore. It's Italian and has
a little bit of everything in it- pasta, veggies and chicken. This should serve 6 or 4

Lori's Italian Bake
This Italian recipe is
brought to us by Lori Long. This delicious casserole
is a wonderful dinner entree and can be reheated for lunch the next day. Add dinner
rolls and you have a fabulous meal! Lori says: "You can prepare Italian Bake the

My family love Italian food and we eat it a

This is a total meal all in one pot!. You can
substitute crushed tomatoes or chicken broth for the wine in this recipe. Meatball Noodle
Soup can be made ahead of time so you'll be able to catch some rays this summer, and I
don't mean the ones from the microwave!

Easter Bread
This is a traditional baked good that is found on many Italian
families Easter dinner table. You can find the anise seed oil in your grocer's herb and
extract section. The candied fruit makes a beautiful looking bread along with adding a
great taste.
Italian Beef Soup

is a member of our online Fit-and-Trim support group. She received many requests for this

When I think of autumn I think of good savory
foods, like stews, homemade breads, and soups. There is nothing better on a cool fall
evening than a stemming, delicious bowl of soup, Minestrone soup. I made this recipe even
faster to prepare by putting it into microwave form. This way you can make your soup and
eat it too !
Brachiole
(Italian Steak Rolls)

cooking style and preferences. In fact, this recipe is from his Italian uncle's cookbook.
Joe's uncle decided to create a cookbook which includes all the recipes from both sides of
his family.
As Joe tells it , "My uncle (Italian ancestry) wrote and compiled all of his side of
the family recipes and "my" side of the family (Russian ancestry) recipes into a
"family" cookbook". Brachioles is a wonderfully tasting main entree, served
with spaghetti or can be included in your tomato sauce like meatballs.

Spaghetti & Olive Oil
Spaghetti and olive oil is one of my
favorite recipes in the world. It is not only delicious, but can be whipped up in 20
minutes. It is economical and good for the whole family. Remember to heat your pan before
adding the olive oil and garlic. This is served best with freshly grated Romano or
Parmesan cheese.
Italian Broccoli
This is a great way to get the whole family to eat their greens, I bet even
George Bush would eat this!!
