Mexican Hot Chocolate
Cooking up some
history
 In 1828, a Dutch chemist and chocolate manufacturer named
Coenraad Van Houten invented a way of making chocolate
into powder. Her reduced the fat from chocolate liqueur and made what was left into
a hard cake. The cake could be crushed into a powder, which would dissolve easily
into liquid. This started a whole new way to make hot chocolate. See this recipe from

It gets it's name from the "secret ingredient", coffee, which is a key
ingredient in Redeye Gravy.. Judy says, "I am a Chile-head from way back! I am a
native of Columbus, Mississippi, a historic
city noted for our antebellum homes. My main interests are cooking and digital
photography. My favorite things to cook with are chile peppers so I have lots of Mexican and spicy recipes. Y'all come back real

for Mexican Chicken Divan. This dish is prepared a day ahead of time so that it
makes dinner a breeze the next day. Mexican Chicken Divan is super for potluck suppers and
holiday parties. This recipe makes 4-6 servings but for a larger crowd just
double the recipe!
Newkirk Family New Mexican Red Chili
This recipe comes from Dolores Newkirk, who says, "This recipe
has been in our family for many years....it has been a family basic. In New Mexico,
we consider RED CHILE a staple like most people eat bread with there meals.
Chile, goes with everything, side dish or the main dish. My dad still makes
the very best Red Chile! My Abuelita(grandma) who is 95 years young in November
makes hers with dried venison meat or elk! It is beyond awesome....My mom and dad's
families both originated from Spain and settled in what was then Mexico, now New
Mexico. Chile, is like having water at every meal. Without it, there is no
flavor or taste...
Taco Salad
Here is a recipe that is perfect for our hot weather. Taco salad is
easy to prepare and will keep you out of the heat and into the swim of things. You can
substitute the ground beef with ground turkey or chicken. For those that are vegetarians,
tofu cut into small chunks will work well too. Hasta luega !

Leftover Beef Burrito
This week's Recipe of the Week is brought to
us by mom, cook, and Families-First community friend Lani : ). She has a fabulous
idea for leftovers- this recipe takes boring roast beef leftovers and turns them into
delicious burritos! She says, "When my children were little they hated leftovers. My
father-in-law gave this recipe to me, when my son was three. Both my children are grown
now. It has been there favorite leftover recipe throughout the years. It is truly an
'Americanized Burrito'."
TexMex Casserole
is a delicious and easy way to bring home that great Mexican flavor
everyone loves. This casserole is meatless and you won't miss the meat, but if you have
meat lovers in your family you can add one pound of browned ground meat to this casserole
at the same time you add all the other ingredients into the baking dish. Instead of
browned ground meat, you can use browned ground turkey or soy crumbles (you can find these
in your grocer's freezer and these don't have to be browned).
Spanish Style Beans & Rice
This recipe is a heart healthy dish in
recognition of February being Heart Month.This is a non- meat entree full of flavor and
very low in cholesterol. To
make the dish even more heart friendly, without cutting out flavor, use olive or canola
oil for the oil in this recipe. Beans, whether canned or fresh, are a tremendous way to
get the protein you need and the nutrients your body requires to be healthy. Beans
are a tremendous food because they do not contain cholesterol and are full of
phytoestrogens which are natural cancer fighters.
Chili Taco Soup
Nancy has sent in a very good soup for those
cold afternoons and nights. Her Chili Taco Soup is a family favorite and simple to
prepare.
Arroz con Chorizio
This an authentic Mexican dish. I make this
for dinner about once a month and everyone loves it!! The chorizo is a spicy Mexican
sausage that is delicious with the mellow peas and flavorful rice. I like to make black
beans as a side dish to this recipe.
Mexican Macaroni & Cheese
This recipe was actually
created by my daughter Evamarie and me while in the grocery store last week. A spur of the
moment kind of thing. Since she loves macaroni and cheese we were thinking of how to make
it with a little more "punch". This is what we came up with and I have to say
she did a great job! According the taste testers in my family it got 2 thumbs up. I hope
you will enjoy it too! |
