Arroz con Chorizio

lady chef by EvamarieThis week's Recipe of the Week features Arroz con Chorizio (Rice and Mexican sausage) an authentic Mexican dish. I make this for dinner about once a month and everyone loves it!! The chorizo is a spicy Mexican sausage that is delicious with the mellow peas and flavorful rice. I like to make black beans as a side dish to this recipe.

The avocado slices and tomato wedges are for garnish and optional. I like the flavor olives give to the rice; try using the jarred salad Spanish olives. This recipe serves 4 hungry people.

What you need:

  • 1 cup of long grain rice
  • ¼ pound of chorizio
  • ¼ cup of canola oil
  • ½ cup of chopped onion
  • 1 medium tomato, peeled, chopped
  • ¼ cup of frozen peas
  • 2 cups o chicken broth
  • Salt to taste
    • Avocado slices
    • Tomato wedges
    • Olives ( ½ a cup) or capers (1/4 cup)

What you do:

  1. Remove the casing from the chorizo. Heat 2 tablespoons of canola oil in a large pot or Dutch oven. Add the chorizo. Fry over medium heat until browned, stirring often to keep the meat crumbly. Remove the sausage form the pot using a slotted spoon. Set aside.
  2. Add the remaining 2 tablespoons of oil to the pot. Add the rice. Cook and stir over a medium heat for about 4-5 minutes. Make sure to stir often as the rice may stick. Add the onion. Cook and stir until the onion is tender.
  3. Add the tomato to the pot. Cook and stir until the tomato can be mashed into the rice. Add browned chorizo, peas, and broth. Cover and simmer until most of the liquid is absorbed. This takes about 30 minutes.
  4. Reduce heat to very low and steam 15-30 minutes, until the rice is tender. Add the olives or capers. Taste and add salt, if needed. Garnish with the avocado slices and tomato wedges.
