Spinach has long held an underrated and little
known reputation, connected only with Popeye, "the sailor man" cartoon
character. It has received little respect and attention. This recipe will erase
these myths. Spinach is a highly nutritious and diverse veggie can be served in many
delicious recipes. It stands well alone, or in combination with other ingredients to
make a savory entree. Spinach is full of the nutrient folic acid, which is critical
for women who are planning on becoming pregnant or who are already pregnant. Folic acid
prevents serious neurological conditions like spina bifida. For those who are
not expecting a child, spinach is loaded with other minerals and fiber that we all need to
maintain good health.What you need:
- 3 pounds of spinach (about 4 fresh bundles)
- 1 teaspoon of salt
- Dressing
- 2 tablespoons of light soy sauce
- 2 teaspoons of sesame seed oil
What you do:
- Remove the tough part of the spinach stems ad wash
thoroughly.
- In a large shallow pot bring 1 1/2 cups of water to a boil.
Add the salt and spinach. Simmer the spinach for 5 to 10 minutes until cooks down,
stirring occasionally. Drain and cool.
- Squeeze out excess water and place the spinach in a
bowl. Mix the light soy sauce and sesame oil. Add to the spinach along with
the remaining ingredients. Toss well and chill.
