There are many signs and symptoms of diabetes. If you or a loved one has a family history of diabetes, constant thirst, frequent urination, and frequent bouts of fatigue please tell them to see their doctor. There is much a person can do through diet to control their blood sugar levels. It is keeping blood sugar levels in the normal range that prevents damage to a body.

In the spirit of National Diabetes Month we have a recipe that is high in taste, low in sugar, and satisfying for the taste buds! Black Beans is simple to prepare as a dinner or lunch entree. Add a green salad and you have a complete meal.

What you need:

  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 whole fresh tomato, diced
  • 1 can of black beans
  • 1/2 cup of medium spiced salsa
  • 1 bay leaf
  • 1 teaspoon of cumin
  • Rice according to package directions- optional

What you do:

  1. Heat oil in a heavy pot for one minute. Add garlic and sauté for 1 minute. Add diced tomato and simmer on medium to low heat, until the tomato is fully cooked ( about 5 minutes).
  2. Add black beans, bay leaf, salsa, and cumin to the tomato mixture, stir and simmer covered for 10 minutes.
  3. Serve either with or without rice. Top with fat-free sour cream and low fat shredded cheese.
