lady chef by EvamarieThis week's Recipe of the Week features Italian Broccoli.  This is a great way to get the whole family to eat their greens, I bet even George Bush
would eat this!!

Make sure when you cut up the broccoli you make them into bite sized pieces- this allows the cheese and olive oil to mix nicely with the vegetable.  Look for fresh and ripe broccoli- if it is pale green and the buds have flowered pass on it, it's too old.   Look for bright green broccoli with tight buds.

This recipe serves four people.

What you need:

  •  2 large stalks of fresh broccoli
  • 3 tablespoons of olive oil
  • 3 cloves of garlic, mined
  • 1/4 -1/2 cup of grated Parmesan cheese

What you do:

  1. In a large Dutch oven either steam (until the broccoli is bright green) the broccoli pieces using a steaming basket or place the broccoli pieces in a Dutch oven filled with boiling salted water and allow to cook for 2 minutes, until broccoli is bright green.  Remove and place in large serving
    bowl.
  2. In a small frying pan place olive oil and heat using medium- low heat. Add garlic and gently cook for 3 -5 minutes.  You don't want the garlic to become brown.
  3. Add the olive oil and garlic to the broccoli in the bowl and toss to coat the vegetable.  Add the cheese and again toss to coat.  Serve.

This recipe is brought to you by Joe Mallas who is a busy executive who travels a great deal. As a bachelor Joe has developed his own cooking style and preferences. In fact, this recipe is from his Italian uncle's cookbook. Joe's uncle decided to create a cookbook which includes all the recipes from both sides of his family.
As Joe tells it , "My uncle (Italian ancestry) wrote and compiled all of his side of the family recipes and "my" side of the family (Russian ancestry) recipes into a "family" cookbook". Brachioles is a wonderfully tasting main entree, served with spaghetti or can be included in your tomato sauce like meatballs.

Superb! More authentic than any other Italian mother......
I was raised in the Italian restaurant business--par excellence! REAL ITALIANOS! This book surpasses anything I ever saw/learned during those many years. I have strongly recommended it to ALL my friends and anyone else who would listen. I've given it as gifts on several occasions and nothing but loud lauds for Dom. INCOMPARABLE by anyone's standards---foreign born or "retreads"! :-)
