What you need:
  • 1 3-4 pound chicken
  • Salt and pepper to taste
  • 1/2 cup of olive oil
  • 1/4 cup of lemon juice
  • 1 teaspoon ground thyme
  • 1 bunch of parsley

  1. Wash and dry the chicken.  Salt and pepper it inside and out.  Rub the chicken well, again, inside and out with a dressing made from the olive oil, lemon juice, and thyme.
  2. Stuff the chicken loosely with the fresh parsley, and bake, uncovered, in a 350 degree oven for about 1 1/4 hours or until juices run clear.
