click here to find out more about SueI have made this dish over a 100 times ! We have had it as an everyday family dinner and for special occasions. I don't mean to brag, but it is always a hit. The best part is how simple its to prepare. It can be made the night before and popped into the oven the next day and will taste delicious. Kids eat this too. Couple it with broccoli and spaghetti with olive oil and you'll have a fabulous meal.

What you need:

  • 1 pound chicken breasts
  • 3 tablespoons flour seasoned with pepper
  • 4 tablespoons butter
  • 1/2 pound fresh mushrooms sliced
  • 2 tablespoons beef bouillon (you can use chicken broth if you prefer)
  • 1/2 cup Marsala wine (can be found in grocery store with cooking wines)
  • Fresh parsley for garnish

What you do:

  1. Put the chicken between 2 pieces of wax paper and pound thin. A good way to release stress : ). Cut the chicken into serving pieces and coat each with flour.
  2. Heat butter in skillet until it sizzles, add the chicken, and cook over high heat until browned on both sides.
  3. Add sliced mushrooms and sauté briefly. Add beef bouillon and Marsala, swoosh everything around in the pan and cook 1 minute longer.
  4. Arrange chicken on a hot serving platter, pour pan juices over, and garnish with fresh parsley sprigs.
