What could be better than cookies and ice cream
It's double heaven!

What you need:

  • 26 chocolate sandwich cookies, finely crushed
    Oreo is a good choice
  • 1/4 cup of margarine or butter, melted
  • 1 quart of coffee ice cream, softened*
  • 1 1/2 cups chocolate fudge sauce

Prepared whipped topping
Cool Whip is a suggestion**

What you do:

  1. fastrecipes.gif (3252 bytes)In a small bowl, combine crushed cookies and melted margarine.
  2. Press onto bottom and side of 9 inch of pie plate.
  3. Spread ice cream into prepared crust.
  4. Top with fudge sauce.
  5. Freeze 6 hours or until firm (try to wait even though it's hard : ))
  6. To serve, add topping to each slice.

    * you can also use vanilla or any other favorite flavor ice cream
    ** whipped cream is a great option too.

Susan's Lemon Drop Cookies (Anginetti)

She says, "I am married with three grown children.  My hobbies are baking and sewing. This cookie recipe is my favorite because it isn't too sweet and goes great with coffee or milk. You could find these cookies up in Syracuse in all the Italian bakeries, but since moving to Georgia , they are impossible to find."
