chocolate.jpg (6027 bytes)This week's Cookie of the Week is brought to us from Jann Webb. Her family loves Chocolate Scotcheroos. Jann has been making these goodies for years. They sure have passed the test of time!
Try them and make them a part of your family's holiday tradition : )

What you need:

  • 1 cup of Karo syrup
  • 1 cup sugar
  • 1 cup peanut butter
  • 6 cups Rice Krispies cereal
  • 1 pkg. chocolate chips
  • 1 pkg. butterscotch chips

What you do:

  1. Melt in microwave until boiling 1 cup of Karo syrup and 1 cup sugar.
  2. Stir thoroughly and mix in 1 cup peanut butter.
  3. Mix this into 6 cups Rice Krispies cereal.
  4. Press into a well-greased 11x14 cake pan.
  5. Melt together (in microwave) 1 pkg. chocolate chips and 1 pkg. butterscotch chips.
  6. Mix together well and spread on top of the Rice Krispies mixture.
  7. Place in the refrigerator until well set.
  8. Cut into small squares.

    Note: I don't know if the package sizes have changed since I started making this or what, but I don't use a whole package of the chocolate chip or butterscotch chips anymore. It seems to be too much.

Gregg's book 1001 Chocolate Recipes has recipes for cookies, cakes, tarts, candy and more. Using a simple double boiler over simmering water, melt the chocolates and rolls the balls. It's great fun for little hands and chocoholics dream come true!
