This week's Dessert of the Week is an
old family favorite, Chocolate Chip cookies. This recipe combines the old fashion
taste of chocolate chips and nuts with a taste of coconut too. I just made these
cookies this week and my kids gobbled them up ( not to mention my hubby Joe). After
the cookies come out of the oven let them set on the cookie sheet for a minute before
removing them to a cooling rack.What you need:
- 1 cup of sugar
- 1 cup of brown sugar
- 1 cup of butter or margarine, softened
- 2 eggs
- 1 1/2 teaspoons of pure vanilla extract
- 3 cups of all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 6 ounces of semisweet chocolate
chips
- 6 ounces of milk chocolate chips
- 1/2 cup of chopped walnuts
- 3/4 cup of shredded coconut
What you do:
- Place sugar, brown sugar, butter, eggs, and vanilla in a
mixing bowl. Beat until all the ingredients are combined and creamy.
- Sift flour, salt, and baking soda together.
Gradually add flour mixture (about a 1/2 cup at a time) to mixture while beating on slow
speed. After the flour has all been added beat on medium speed for another minute.
- Beating on slow speed, add the chips, nuts, and
coconut. Drop by teaspoonfuls on a greased baking sheet, 2 inches
apart. Bake at 375 degrees for 10-12 minutes. After the cookies
are done baking let them set for 1 minute before removing with a spatula to a cooling
rack.
