Sue's Chocolate Chip Cookies

click here to find out more about SueThis week's Dessert of the Week is an old family favorite, Chocolate Chip cookies.  This recipe combines the old fashion taste of chocolate chips and nuts with a taste of coconut too.  I just made these cookies this week and my kids gobbled them up ( not to mention my hubby Joe).  After the cookies come out of the oven let them set on the cookie sheet for a minute before removing them to a cooling rack.

What you need:

  • 1 cup of sugar
  • 1 cup of brown sugar
  • 1 cup of butter or margarine, softened
  • 2 eggs
  • 1 1/2 teaspoons of pure vanilla extract
  • 3 cups of all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 6 ounces of semisweet chocolate chips
  • 6 ounces of milk chocolate chips
  • 1/2 cup of chopped walnuts
  • 3/4 cup of shredded coconut

What you do:

  1. Place sugar, brown sugar, butter, eggs, and vanilla in a mixing bowl. Beat until all the ingredients are combined and creamy.
  2. Sift flour, salt, and baking soda together.   Gradually add flour mixture (about a 1/2 cup at a time) to mixture while beating on slow speed. After the flour has all been added beat on medium speed for another minute.
  3. Beating on slow speed, add the chips, nuts, and coconut.   Drop by teaspoonfuls on a greased baking sheet, 2 inches apart.   Bake at 375 degrees for 10-12 minutes.   After the cookies are done baking let them set for 1 minute before removing with a spatula to a cooling rack.
