This week's Dessert of the Week is Triple Layer Cookie Bars.  These delicious and decadent  confections are guaranteed to satisfy your family's sweet tooth.  This dessert is not for the faint of heart  - just dig in and enjoy these luscious bars.

What you need:

  • 1/2 cup of butter or margarine
  • 1 1/2 cups of graham cracker crumbs
  • 1 7 ounce package of flaked coconut (2 2/3 cup)
  • 1/2 cup of creamy peanut butter
  • 1 14 ounce can sweetened condensed milk
  • 1 12 ounce package semi-sweet chocolate chips

What you do:

  1. Preheat oven to 350 degrees (for glass dish 325).  In 13x9 baking pan, melt margarine  in oven.   Sprinkle crumbs evenly over margarine.  Top evenly with coconut, then sweetened condensed milk.
  2. Bake 25 minutes or until lightly browned.  In small saucepan, over low heat, melt chips with peanut butter.  Spread evenly over hot coconut layer. Cool 30 minutes.  Chill thoroughly.  Cut into bars.  Store loosely covered at room temperature.

Quick Peanut Butter Cookies
