Middle Eastern Chick Peas
with Couscous

click here to find out more about SueLast fall we all went to Disneyworld in Florida and had a wonderful time. We ate a delicious dinner at the Moroccan restaurant in EPCOT. This introduction to African cuisine got me hooked on couscous. Couscous is a semolina wheat product which is a cross between pasta and rice. You can dress it up with vegetables, meats, and sauces just like rice and pasta. This week's Recipe of the Week is for Middle Eastern Chick Peas with Couscous. It is a simple and fast meal to prepare which will give you more time to have fun in the sun !

What you need:

  • 2 large red potatoes, cut in 3/4 inch pieces
  • 1 medium zucchini (about 8 ounces) cut in 3/4/ pieces
  • 1 cup chicken or vegetable broth
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon each ground cinnamon, salt and pepper
  • 1 box (10 ounces ) couscous (1 1/2 cups)
  • 1 cup packed cilantro leaves
  • 1 can ( 15- 16 ounces) chick peas (garbanzo beans), drained and rinsed
  • 1/2 cup plain low fat yogurt
  • Garnish with cilantro sprigs

What you do:

  1. Bring potatoes, zucchini, broth, cumin, cinnamon, salt and pepper to a boil in a medium skillet. Reduce heat and simmer 8-10 minutes until potatoes are tender.
  2. Meanwhile cook couscous according to package directions and coarsely chop the cilantro.
  3. When potatoes are tender, add the cilantro, chick peas to skillet mixture. Cook just to heat through.
  4. To serve: Place couscous on a serving platter. Add vegetable mixture. Top with dollops of yogurt. garnish with cilantro.

Veggie Pizza Squares & Dip
