lady chef by EvamarieThis week's Recipe of the Week features a tasty and beautiful Cranberry Molded Salad.  Not only will this make a terrific centerpiece for your Thanksgiving family dinner it will also be delicious.  I like to use miniature marshmallows to top the mop and decorate around the mold : ).  Feel free to use a combination of nuts in this recipe or omit them if you choose.

What You Need:

  • 1 package (3 ounces) raspberry or strawberry flavored gelatin
  • 1 cup of hot water
  • 1/2 cup of cold water
  • 1 small orange, peeled, segmented, seeded ( seeds removed) and each segment halved crosswise
  • 1/2 cup of canned crushed pineapple, well drained
  • 1 can (I pound) whole cranberry sauce
  • 1/4 cup of chopped nuts (pecans, almonds, walnuts)
  • Lettuce leaves for garnish- about 10 leaves
  • Marshmallows- optional

What You Do:

  1. Dissolve gelatin in hot water in large heatproof bowl.   Stir in cold water.  Chill in your refrigerator until the gelatin has the same texture as egg whites.  This usually takes about 45 minutes.
  2. Fold in the orange, pineapple, cranberry, and nuts into the gelatin. Spray a 1 1/2 quart gelatin mold with nonstick cooking spray ( like Pam) . Pour gelatin mixture into the mold.  Chill until firm about 3 hours.
  3. Before serving; place lettuce leaves on a serving plate.   Insert a small metal spatula around the edge of the mold about a 1/4 of an inch.   Moisten your fingers and gently pull the gelatin away from the edges of the mold. This should allow air to come in between the gelatin and mold and the gelatin should easily "fall" out of the mold.
