click here to buy recipes for changeclick here to find out more about SueThis week's Dessert of the Week is brought to us by the authors of "Recipes for Change" Molly Siple and Lissa DeAngelis.  This easy to prepare and lightfruit delight is not only delicious but low in fat and high in nutrition. Fresh Summer Fruit Compote is only one of many exciting and delicious recipes in Siple and DeAngelis' book.  Kick off the warm weather with this bright and sparkling dish!

What you need:

  • 2 ripe peaches, quartered and pitted
  • 4 apricots, halved and pitted
  • 2 cups of cherries, stems removed
  • 1/2 pint blackberries or strawberries, hulled
  • 2 cups of apple juice
  • 1 teaspoon pure vanilla extract
  • 4 springs of mint

What you do:

  • In a medium saucepan, in the following order layer peaches, apricots, cherries, and blackberries.  Mix juice and vanilla and pour over fruit. Bring to a boil, covered, and turn off the heat.  Do not stir.  Let fruit sit in covered pot for 1-2 minutes.
  • Serve in wine goblets with mint sprigs ( remembering that cherries have pits).

Spicy Fruit Salad

Her Spicy Fruit Salad is a good dessert alternative or breakfast dish. It is tasty and simple to make.  Each portion contains only a 100 calories!

Fruity Tooty Smoothie
is another great tasting frosty smoothie. Kids in particular will enjoy this smoothie because it's really fruit filled!!

Raspberry Sorbet Delight
Frozen Raspberry Sorbet Delight is light, sweet, and a wonderful ending to any dinner or lunch. This would be a lovely addition to your dinner table.
