lady chef by Evamarieappetizers.jpg (4798 bytes)Golden mushrooms are prepared in your microwave. They are great as an appetizer or as a snack. I like to include and 1/4 cup of Parmesan cheese in the stuffing mixture. Please remember not to run the mushrooms under water to clean them. They will get mushy and lose some of their flavor. Always use a damp clean towel and brush off any dirt.

What you need:

  • 1 pound medium mushrooms
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 3 tablespoons margarine or butter
  • 1 1/2 cups soft bread crumbs (plain or herbed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground turmeric
  • 1/4 cup Parmesan cheese (optional)

What you do:

  1. Cut stems from mushrooms.; finely chop enough stems to measure 1/3 cup. Mix chopped stems, onion, celery, and margarine in 1-quart casserole. Microwave uncovered on high until onion is tender, 2-3 minutes. Stir in bread crumbs, salt, marjoram, pepper, and turmeric.

  2. Fill mushroom caps with stuffing mixture; arrange mushrooms filled side up (smallest mushrooms in the center) on two 10- inch plates. Microwave one plate at a time uncovered on high 2 minutes; rotate plate 1/2 turn. Microwave until hot, 1-2 minutes longer.
Potstickers
(Chinese Dumplings)

click here to find out more about SuePotstickers are delicious Chinese dumplings that can be served as an appetizer or entree. I make them every New Year's Eve along with fried rice and they are practically gone when I sit down to eat ! They are that good. My local Chinese restaurant creates heavenly potstickers which are steamed and I believe these are very close to their delicious bundles of heaven. I hope you enjoy these as much as my family does.
