This week's Dessert of the
Week is Ice Cream Crunch Balls. These delicious goodies are a wonderful way to greet
and beat the warm weather. Try different flavors of ice cream for a terrific frozen
variety packWhat
you need:
- 2 cups of crushed chocolate cookie sandwich cookies ( about
24 cookies)
- 1 cup of finely chopped pecans
- 1 cup of slivered almonds
- 1 teaspoon peppermint extract
- 1 container (1/2 gallon) vanilla ice cream, firm
What you do:
- Combine the cookie crumbs and nuts. Add the peppermint
extract and mix well. Pour generous amounts of the mixture onto waxed paper.
- Scoop 1/2 cup of vanilla ice cream onto crumb mixture.
Roll quickly and
firmly into a ball, covering ice cream completely with crumbs.
- Place ice cream ball in a foil cupcake liner. Repeat
until 8 ice cream balls have been formed. Freeze about 1 hour or until
firm. If ice cream becomes soft, return to freezer 30 minutes before
reshaping.
