Ice Cream Sandwiches

click here to find out more about SueMy kids love ice cream sandwiches and we have a hard time finding ones with really good cookies. So I have made them using either my homemade chocolate chip cookies or buying my favorite cookies. This can be a simple and delicious (not to mention money saver) dessert that the whole family will love. You can make them right before you plan on eating them or prepare them beforehand by putting the finished sandwiches in individual freezer bags. Choose any flavor of ice cream and dig in!

What you need:

  • 8 large chocolate chip cookies
  • 1 1/3 cups of your favorite ice cream
  • 2 tablespoons mini chocolate pieces
  • 2 tablespoons chocolate-flavored syrup

What you do:

  1. Arrange cookies in a single layer on a large baking sheet. Place sheet in freezer.
  2. Place ice cream in refrigerator to soften for 15 to 30 minutes or just soft enough to scoop.
  3. Stir mini -chocolate pieces into ice cream to distribute evenly. Gently swirl in chocolate syrup, being careful not to stir too much and lose the swirl pattern
  4. To assemble: Remove cookies from freezer. Place 1 cookie, flat side up, in center of 8x8 piece of plastic wrap. Scoop about 1/3 cup of ice cream mixture onto middle of cookie. Top with another cookie, flat side down; gently sandwich together to press ice cream out to edges.
  5. Using a table knife or small metal spatula, smooth ice cream around edge. Wrap sandwich cookie tightly in plastic wrap. Place in freezer for at least 2 hours or overnight to firm up.
  6. Repeat with remaining cookies and ice cream mixture to make 3 more ice cream sandwiches.
  7. remove cookies from freezer to soften, about 10 minutes before serving. Remove plastic wrap.
