This recipe was actually
created by my daughter Evamarie
and me while in the grocery store last week. A spur of the moment kind of thing. Since she
loves macaroni and cheese we were thinking of how to make it with a little more
"punch". This is what we came up with and I have to say she did a great job!
According the taste testers in my family it got 2 thumbs up. I hope you will enjoy it too!What you need:
- 1 pound of elbow macaroni
- cooked according to box directions
- 2 pounds of ground beef,
browned
- 1/2 pound of Velveeta
- 1/2 cup of salsa*
- 2 tablespoons of butter or margarine
- 1/4 cup milk salt and pepper to taste
What you do:
- Prepared macaroni according to box directions and put to
side. Add about 1 tablespoon of oil or butter to keep macaroni from sticking.
- Brown ground beef in a skillet - add salt and pepper to meat
while cooking.
- Place Velveeta, milk, margarine and salsa in a microwave
proof bowl and cover with plastic wrap. Heat in microwave for about 3 minutes, stirring
once. If the cheese is still not melted after the 3 minutes micro for an additional 1
minute.
- Combine meat, macaroni and cheese mixture in a large bowl
and stir thoroughly. Serve immediately.
* Choose the
heat of the salsa according to your preference. We used medium salsa, but you can use
mild, or if you really like it spicy the hot.

This recipe is a heart healthy dish in
recognition of February being Heart Month.This is a non- meat entree full of flavor and
very low in cholesterol. To make the dish even more heart friendly, without cutting out
flavor, use olive or canola oil for the oil in this recipe. Beans, whether canned or
fresh, are a tremendous way to get the protein you need and the nutrients your body
requires to be healthy. Beans are a tremendous food because they do not contain
cholesterol and are full of phytoestrogens which are natural cancer fighters.

Wonderful introduction to the world of New Mexico's cuisine! This is a super
introduction to the habit-forming, varied cuisine of New Mexico! The recipes are tested in
the Cooking School, so you can be sure that they are workable. Since I have attended three
classes at the school, it is with confidence that I recommend this book. The recipe for
New Mexican Green Chile and Cabbage Soup with Sausage alone is worth the price! There is a
good list of sources for Southwestern ingredients in the back. My only criticism is that I
find the layout of the index to be confusing. |
