What you need:

  • 1/2 cup unsalted butter, at room temperature
  • 1 cup maple syrup
  • 2 eggs
  • 1 teaspoon of pure vanilla extract
  • 1 1/2 cups oatmeal ( not quick cooking)
  • 3/4 cup whole wheat pastry flour
  • 1/2 cup raisins or dried currants
  • 1 cup walnuts, or pecans, chopped coarsely
  • 1/2 cup unsweetened coconut (optional)
  • 1 teaspoon sea salt
  • 1 teaspoon cinnamon

What you do:

  1. Preheat oven to 350 degrees. In a medium bowl or processor, whip butter. Add maple syrup, eggs, and vanilla, beating well.
  2. In a second medium bowl mix together oatmeal, flour, raisins, walnuts, coconut, salt, and cinnamon. With a wooden spoon, stir the oatmeal mixture into the butter combination until moistened.
  3. Prepare two baking sheets with parchment paper. Using two teaspoons, drop dough onto baking sheets in mounds 1 inch apart.
  4. Bake 12-15 minutes until golden. After 7 minutes switch the top sheet with the bottom sheet to ensure even cooking.
  5. Let cookies cool on baking sheet for a few minutes, then remove to a cooling rack or plates. (If using a plates, do not stack cookies more than two high until fully cooled.)
